What kind of cookbooks are you interested in looking at and cooking from ?

I’m trying to get as many opinions on this as I would like to write a great cookbook. What interests everyone and what would make you pick up and buy a cookbook ? Thanks!!

I guess I’ve bought my cookbooks based on the pictures on their cover… gives me an idea of what’s inside (you can’t judge a book by it’s cover?!).
